The 15 Year Old’s distinctive character is the result of selective maturation; a proportion of the spirit is matured in a selection of French Oak casks for a limited period, so as not to overpower the final result.
The Glenlivet was one of the first distilleries to use French Oak in the whisky making process, a technique that has since been imitated by many others.
Limousin Oak, which is cut in the Dordogne region of France, is often used to mature fine wines and cognacs. In the case of The Glenlivet, its low density allows the spirit to penetrate deep into the wood, imparting the expression’s distinctive spiciness.
The French Oak also increases the intensity of the whisky, resulting in a richer and creamier finish.

First whiffs pick up scents of fresh pineapple, cedar, and paraffin; later sniffings detect subtle notes of baked pear and sweet oak. Palate entry features a firm, moderately oily, and velvety texture; by midpalate, integrated flavors of ripe peach, pear drops and bran delight the taste buds. Finish is extended, semisweet and coconut-like. Replaces the 12-year-old French Oak Finish. Best Buy. Score: 90-95. February 01, 2005.

I enjoy Glenlivet whisky for its subtle elegance, floral notes, along with a delicious "peaches & cream" flavor. For this particular whisky, finishing some of the whisky in new French oak barrels adds depth, dried spice (vanilla, clove) and pleasing dryness to the Glenlivet profile. This whisky is more polished and refined than the 12 year old expression it replaces.
